Most people,barring me, like dry fruits so this is a cookie that should appeal to the aam junta(as you can see the election fever will take sometime fade away!)

Ingredients:
- 100 gms maida
- 75 gms softened butter
- 50 gms powdered sugar
- 2 drops almond essence/1 tsp vanilla essence
- 2-3 tbsp finely chopped cashewnuts
Method:
- Sieve maida.
- Preheat oven at 200 deg C.
- Beat butter and sugar till light and creamy. Add essence and beat again.
- Add flour and mix gently to get a soft dough.
- Form into small balls, flatten lightly and roll in the chopped cashews.
- Arrange in a greased baking tray and bake for 15-20 minutes. Remove from tray when cool.

Notes: There is nothing wrong with these cookies except one thing- the cashew pieces tend to fall off once the cookies are baked. Obviously just pressing them onto the cookies before baking isnt good enough. I think to remedy the situation we could baste the cookies with lightly beaten egg white and then roll them in the cashew piece. I think that would make them stick better. I am not sure how effective would using milk as a substitute of egg white be since I normally use egg in recipes I am not sure about how effective its substitutes are.
This by the way, is the tenth cookie on this blog. Not bad I think!!:D
Hmm..ten and still going strong:).Love the crunchy cashews in the cookies,I faced a similar problem while making cookies with nuts.Once baked,the nuts have a tendency to fall off:(.Egg wash is a great solution,but that would make these otherwise eggless cookies egg-full:).

I am not sure but you can try midly coating the cookies with sugar syrup and then try adding the cashews, i havent tried this method but i think it shud work, if i try i’ll let you know
@divya- i know.. but i eat eggs, so im kinda ok with that… ut if u dont, then we need to think up of a way to make those nuts stick nice n proper!!
@parita- sugar syrup i have never heard of… but it shud work na? sugar is sticky… so with that logic cashew piece shud stick…hmmmmm..

I love nuts in everything, so for me it’s an absoultely adorable creation
looks well baked and crisp. It’s ok for nuts to fall off the baked cookies I think there’s no particular soultion as such, anything extra done might spoil the originality of the recipe.

@suparna-oh if u like dry fruits u will like this one.. these cookies turn out really nice and crisp.. not too heavy eaither.. im gonna try the egg wash if that fails, i have only got Fevicol as the remaining option!!lol
